The Sangiovese and Cabernet Sauvignon grapes , harvested by hand between September and October, are carefully selected both in the vineyard and in the cellar. Vinification takes place separately in stainless steel , with maceration on the skins for 10–15 days , during which manual pumping over and punching down are carried out to enhance the extraction of color and polyphenols.
Once fermentation is complete, the wine is blended and aged in oak barriques , where it develops complexity, depth, and structure. It then ages in bottle for 6 months , completing an elegant, intense, and highly distinctive profile.
